Potato soup can get pretty fancy these days, but we’re revisiting its roots, which lie in simple pantry ingredients. This soup comes together quickly in just one pot on the stovetop, creating a cozy bowl perfect for snuggling up with on a cool night. And if you want to “fancify” it a little, we’ve also offered suggestions for plenty of delicious toppings.

Melt the butter in a large saucepan over medium heat, then add the chopped onion and cook until translucent, 7-8 minutes.
Add the potatoes, broth, bay leaf, thyme, salt, and pepper and increase the heat to high to bring to a boil, then reduce to a simmer. Cook until the potatoes are cooked through, approximately 20 minutes.
Remove the bay leaf and stir in the milk, cooking for two minutes. Taste and adjust seasonings as needed.
Use a potato masher to mash some of the potatoes. For a smoother consistency, use an immersion blender and blend the soup until smooth. Alternatively, place the soup in a blender, only filling the blender halfway. Remove the center cap of the lid and cover with a kitchen towel before blending; you may need to do this in batches.

Soak the dates in brewed espresso for 5 minutes (10 minutes if your dates are especially dry). Drain the dates and discard (or drink) the espresso.
Combine the nuts and dates in a food processor and process, stopping to scrape down the sides as necessary, until the mixture begins to clump together. Add the vanilla, coconut, ground espresso beans, and salt. Process until well incorporated. If adding chocolate chips, stir them in now.
Roll about 1 tablespoon of the “dough” into a ball. Repeat with the remaining dough. If you’d like, roll each ball in shredded coconut or dust with cocoa powder.
For the best taste, let the bites rest for at least an hour in the refrigerator to allow the coffee flavor to bloom and the flavors to meld. Store bites in the refrigerator for up to a week.
