Marinated Olives

Elevate your everyday snacking or impress guests with olives infused with fresh herbs, lemon, and garlic.  A great option to add to a charcuterie or cheese board. This recipe is so easy to put together, requiring only 10 minutes.

2 (6.3-ounce) jars Natural Grocers® Brand Organic Olives (Greek Green and/or Greek Kalamata Pitted), drained and rinsed
4 organic garlic cloves, thinly sliced
2 medium-to-large sprigs organic rosemary, leaves removed from stems and minced
8-10 sprigs organic thyme
Lemon rind from 1/2 an organic lemon, cut into thin strips (use a vegetable peeler to remove larger strips of rind, then cut into thin strips)
1 teaspoon Natural Grocers Brand Bulk Organic Red Chili Flakes (optional, for a little spice)
1 1⁄2 cups Natural Grocers Brand Organic Extra Virgin Olive Oil
  1. Layer the olives, garlic, herbs, lemon rind, & chili flakes in a 16-ounce jar or 24-ounce airtight container. Slowly pour the olive oil over the top, just until the olives are submerged. Depending on the size of your olives and container, you may need to slightly adjust the amount of olive oil (a little more or a little less).
  2. Marinate the olives. Set the sealed jar/container in the refrigerator for at least 48 hours, up to 1 week.
