No-Cook Tomato Sauce

It’s peak tomato season, and this fresh, No-Cook Tomato Sauce is such a great way to showcase those perfectly ripe summer tomatoes. The sauce is fantastic on pasta, but it also works well on pizza, bruschetta, or spooned over grilled fish, chicken, zucchini, eggplant, or polenta.

Makes 4 cups
2 – 2 1/2 pounds perfectly ripe organic tomatoes
1 teaspoon Natural Grocers® Brand Bulk Real Salt
2 – 4 medium organic garlic cloves, minced (use the higher amount for a stronger garlic taste)
1⁄3 cup Natural Grocers Brand Organic Extra Virgin Olive Oil, plus more for serving
1⁄2 cup roughly chopped organic basil (use more if desired)
Natural Grocers Brand Organic Grated or Shredded Parmesan Cheese, for topping
  1. Cut the tomatoes in half and remove the stems and cores. Squeeze some of the juice and seeds out of each half (it’s okay if some remain). Set one medium tomato aside. Add the remaining tomatoes, salt, garlic, olive oil, and basil to a glass or ceramic bowl. Use your hands to squeeze everything together, breaking the tomatoes up as you go (go slowly at first to avoid tomato juice squirting out of the bowl). Chop the reserved tomato and stir into the sauce. Set aside for 30 minutes to allow flavors to develop.
  2. If you’re serving with pasta, make the pasta while the sauce rests.
  3. Toss with cooked pasta. Add a drizzle of olive oil and a generous amount of Parmesan cheese before serving.
