Gluten-Free Cake Mix Cookies 3 Ways

If you have a box of our Natural Grocers® Brand Gluten Free Vanilla Cake Mix in your pantry, you have an easy recipe for cookies made your way. Here are three ways you can create special cookies for the holidays, whether you’re feeling snowy, “Grinchy,” or spicy!

1 (19-ounce) box Natural Grocers Brand Gluten Free Vanilla Cake Mix
3 Natural Grocers Brand Regenerative Organic Pasture-Raised Eggs
1⁄2 cup organic butter, softened
Add Ins for Snowy Cookies
1⁄2 cup Natural Grocers Brand Bulk Organic Fine Shredded Coconut, plus 3 tablespoons coconut to sprinkle on top (per box of cake mix)
Add Ins for Grinchy Cookies
2 tablespoons organic matcha powder (per box of cake mix)
Add Ins for Pecan Spice Cookies
1⁄2 cup Natural Grocers Brand Bulk Organic Pecan Pieces (per box of cake mix)
2 teaspoons Natural Grocers Brand Bulk Organic Ground Ginger (per box of cake mix)
1⁄2 teaspoon Natural Grocers Brand Bulk Organic Ground Cinnamon (per box of cake mix)
1⁄4 teaspoon Natural Grocers Brand Bulk Organic Ground Nutmeg (per box of cake mix)
1⁄8 teaspoon Natural Grocers Brand Bulk Organic Ground Cloves (per box of cake mix)

1. In a stand mixer or in a large bowl using a hand mixer, mix the cake mix, eggs, butter, and add-in of your choice.

2. Scoop the cookie dough onto a parchment-lined cookie sheet using a two-tablespoon scoop. For Snowy Cookies, sprinkle coconut over the cookies as well. Once scooped, place the cookie sheet into the refrigerator for 60 minutes to prevent the cookies from spreading out when baked.

3. When ready to bake the cookies, preheat oven to 350°F.

4. Bake 12 cookies per baking sheet for 12-14 minutes, or until they no longer look wet on top. Work in batches if necessary, and keep the remaining dough in the refrigerator until ready to use.

5. Remove the cookies from the oven and let cool on the cookie sheet for 5 minutes, then move to a wire rack to cool completely. Store in an airtight container.

Note: Refrigerated cookies can be frozen for up to 3 months (in an airtight container). To bake, place frozen cookies on a parchment-lined baking sheet in a preheated 350°F oven and bake for 15 minutes, or until lightly browned around the edges.

1 (3.2-ounce) bar Chocolove® Strong Dark Chocolate

*You may even experiment with spices (we like Natural Grocers Brand Bulk Chili Powder or Cayenne sprinkled over the top for a little kick).

1. Break the three chocolate bars into chunks and gently melt in a double boiler or a microwave. Once melted, stir to combine.

2. Line a baking sheet with parchment paper.

3. Spoon the melted chocolate (1 tablespoon per medallion), onto the baking sheet in a circular shape, spaced about ½-inch apart. Repeat until the pan is full.

4. Sprinkle desired toppings on top of each medallion.

5. Refrigerate until set, 30 minutes to 1 hour. Lift each medallion off the parchment paper and lightly tap off loose toppings.

6. Enjoy immediately and store leftovers in an airtight container.
