Slow Cooker Chicken Cacciatore Recipe
Low and slow is the way to go! Braised in a sauce made with organic fire roasted tomatoes, garlic, artichoke hearts, olives, and capers, this Italian-style chicken is tender and delicious. It is a simple recipe that requires very little hands-on time, making it perfect for busy weeknights. It’s also easy to double or triple the recipe to serve a crowd or just to ensure you have leftovers (because you’ll want to eat it again!).

2 pounds organic boneless, skinless chicken thighs
1 tablespoon Natural Grocers® Brand Organic Extra Virgin Olive Oil
1 (15.5-ounce) can Natural Grocers Brand Organic Fire Roasted Tomatoes , (Crushed or Diced)
4 organic garlic cloves, minced
1 (14-ounce) can organic artichoke hearts, drained and coarsely chopped
1 (6.5-ounce) can organic sliced mushrooms, drained
1⁄2 (6-ounce) jar Natural Grocers Brand Organic Pitted Green Olives, drained and coarsely chopped
1 tablespoon Natural Grocers Brand Organic Non-Pareil Capers
Optional toppings: minced organic parsley, Natural Grocers Brand Organic Parmesan Cheese Shreds, sliced organic green onion, chopped organic tomatoes
Natural Grocers Brand Bulk organic seasonings
1 tablespoon smoked paprika
1 1⁄2 teaspoons Italian Seasoning Blend
1 teaspoon Ground Black Pepper
Real Salt, to taste

1. Set slow cooker to low heat and cover.

2. Drizzle chicken thighs with olive oil and sprinkle with seasonings. Set aside.

3. Add the tomatoes, garlic, artichoke hearts, mushrooms, olives, and capers to the slow cooker. Stir until well combined.

4. Add the seasoned chicken thighs and stir, making sure to coat the chicken with the vegetables. Cover and cook for 6-7 hours, or until chicken is cooked through.

5. Serve over top of cooked pasta or rice, alongside roasted vegetables, or with a side salad. Add toppings of choice just before serving.
