Raw Apple Crumble

This light and refreshing dessert is the perfect way to showcase crisp, fresh, fall apples. Reminiscent of its baked counterpart, it’s the perfect dish for the last remaining warm days of the season.

10 (1/2 cup each)
Apple Layer
4 cups unpeeled, cored, halved and thinly sliced apples, (about 3 apples)
1 cup Natural Grocers Organic Raisins
1⁄2 cup Natural Grocers Organic Medjool Dates, pitted
1⁄2 cup water
3⁄4 cup freshly squeezed orange juice or apple juice
1⁄4 teaspoon orange zest
1⁄4 teaspoon Natural Grocers Ground Cinnamon
1 pinch of Natural Grocers Ground Nutmeg
1 pinch of Natural Grocers Ground Allspice
1 pinch sea salt
Crumble
1 1⁄4 cups Natural Grocers Walnut Pieces
1⁄4 cup Natural Grocers Organic Medjool Dates, pitted
2 tablespoons Natural Grocers Fine Shredded Coconut
1 pinch of Natural Grocers Ground Cinnamon
1 pinch of Natural Grocers Ground Cardamom

1. Prepare the apple layer: Place the apples and raisins in a bowl. Place the dates, water, juice, orange zest, cinnamon, nutmeg, allspice, and sea salt in a blender and blend until creamy. Add to the apple mixture and mix well. Transfer to an 8 x 8-inch baking dish.

2. Prepare the crumble: Place all the ingredients in a food processor and pulse to chop until the walnuts are finely ground. Do not over process. Sprinkle on top of the apple layer.

 

Variations: Replace the apples with pears, peaches, or pineapple. Replace the walnuts with hazelnuts, pistachio nuts, or sunflower seeds. Replace the dates with dried figs or apricots.

Tips for What to Do With Excess ingredients: Besides just being eaten as is, leftover orange can be added to oatmeal, salads or juiced and added to salad dressing or smoothies. Dates can be chopped and added to oatmeal, salads or trail mix. They are also delicious stuffed with almond butter or coconut butter for a quick, energy dense snack.
