Spanish Red Pepper Soup

Inspired by Spanish Romesco sauce, this delicious soup is flavorful without being too heavy, and it’s a snap to make using pantry staples you probably already have on hand! Serve it as a side dish, as a light meal with a sandwich, or in shot or espresso glasses for an elegant appetizer.

4 organic garlic cloves
1 teaspoon Natural Grocers Brand Bulk Organic Ground Smoked Paprika
4 tablespoons Natural Grocers Brand Almond Butter
1⁄2 teaspoon Natural Grocers Brand Bulk Real Salt
2 cups organic vegetable broth
1 teaspoon red wine vinegar

1. Combine the red peppers, tomatoes, garlic, paprika, almond butter, and salt in a blender and process until smooth.

2. Transfer to a large saucepan and add the broth, stirring to combine. Gently heat for 10-15 minutes. Remove from the heat and stir in the vinegar.

3. Divide into serving bowls and garnish each with a drizzle of olive oil, minced parsley, and optional toppings of your choice.
