One-Pan Mediterranean Rice

This one-pan rice dish brings the tastes of the Mediterranean to your table, with a minimum of fuss or clean up. It looks fancy, tastes amazing, and is ready to pop in the oven in less than 20 minutes!

1 cup Natural Grocers® Brand Bulk Organic White Basmati Rice
1 teaspoon Natural Grocers Brand Bulk Real Salt
1⁄2 teaspoon Natural Grocers Brand Bulk Organic Ground Black Pepper
1 (15.5-ounce) can Natural Grocers Brand Organic Great Northern Beans or Organic Garbanzo Beans, drained and rinsed
1⁄2 cup Natural Grocers Brand Organic Pitted Kalamata Olives, roughly chopped
1⁄2 cup Natural Grocers Brand Organic Pitted Green Olives , roughly chopped
1 cup Natural Grocers Brand Organic Roasted Red Pepper Strips, roughly chopped
1 cup marinated organic artichoke hearts, roughly chopped
2 organic garlic cloves, minced
1 cup organic grape tomatoes, sliced in half
2 cups organic baby spinach, roughly chopped
2 cups organic vegetable broth
1⁄2 organic lemon (save other half for garnish)
Optional toppings
finely chopped organic parsley
vegan feta crumbles

1. Preheat oven to 400°F.

2. Add the rice to a three-quart casserole dish (13 x 9 x 2-inch). Top with salt and pepper, beans, olives, red peppers, artichokes, garlic, tomatoes, and spinach. Use tongs or a spoon to mix and distribute all the ingredients somewhat evenly.

3. Pour the vegetable broth over the rice and vegetables. Gently stir once more to evenly distribute.

4. Bake uncovered for 40 minutes, or until the rice is tender.  

5. Remove the casserole dish from the oven and squeeze the lemon over the top. Add optional toppings as desired before serving. Leftovers can be refrigerated for up to three days (this dish is also delicious cold!).
