Mediterranean Tuna Salad

Tuna is a fast and easy protein source, but it can become a little boring. Enter, Mediterranean Tuna Salad! This hearty version brings the flavor and nutrient-density. It’s pantry friendly and on the table in less than 15 minutes.

1 1⁄2 tablespoons organic tahini
1 tablespoon organic lemon juice
1 tablespoon filtered water
1 (5-ounce) can Natural Grocers® Brand Wild Skip Jack or Wild Albacore Chunk Light Tuna, drained
2 tablespoons Natural Grocers Brand Organic Sliced Kalamata Olives
3 tablespoons crumbled organic feta cheese
2 tablespoons finely chopped organic parsley
2 tablespoons finely chopped organic red onion
1 1⁄2 teaspoons Natural Grocers Brand Organic Capers
1 tablespoon Natural Grocers Brand Bulk Slivered Almonds
1 tablespoon Natural Grocers Brand Organic Extra Virgin Olive Oil
Natural Grocers Brand Bulk Real Salt and Organic Black Pepper, to taste

1. Whisk together the tahini, lemon juice, and water in a medium bowl. Add the tuna, olives, feta, parsley, onion, capers, almonds, and olive oil and stir to combine. Add salt and pepper, to taste.

2. Serve over salad greens tossed in a vinaigrette dressing, with sliced organic tomato, organic cucumber, and organic avocado and/or on top of gluten-free toast.
