Lucky Leprechaun Smoothie

This minty green treat is a healthy way to celebrate St. Patrick's Day, or to whip up anytime the mood strikes. You can’t taste the spinach, but it gives the smoothie a lovely green color and a big nutrient boost. Feel free to double or triple to share the luck!

1 (12-ounce) smoothie
3⁄4 cup organic milk or your favorite milk alternative
2 Natural Grocers® Brand Bulk Organic Deglet Noor Dates or 1 Medjool Date
1 small organic banana (ideally frozen)
1⁄4 organic avocado
2 teaspoons Natural Grocers Brand Bulk Organic White Chia Seeds
handful organic baby spinach
1 serving Natural Grocers Brand Unflavored Multi Collagen Peptides or your favorite vegan/vegetarian protein powder (optional)
1/4 - 1/2 teaspoon organic peppermint extract
about 1/2 cup ice cubes
stevia, honey, or maple syrup, to taste (optional)
Optional toppings
Natural Grocers Brand Bulk Organic Raw Cacao Beans (“nibs”), or Semi-Sweet Mini Chocolate Chips
fresh organic mint

1. Combine the milk, dates, banana, avocado, chia seeds, spinach, protein powder, ¼ teaspoon peppermint extract, and ice cubes in a blender. Blend on high until smooth, adding more milk as needed to facilitate blending.

2. Taste and add remaining ¼ teaspoon of peppermint extract and additional sweetener if desired.

3. Top with cacao nibs or mini chocolate chips and fresh mint and serve immediately.
