Creamy Whipped Feta Dip

Elevate your everyday snacking or impress guests with this creamy feta dip. This recipe is a great option to add to a charcuterie or cheese board; whipped feta is also a delicious dip for crudité or crackers or as a spread on sandwiches or wraps. These marinated olives also make an excellent accompaniment. It is so easy to put together, requiring only 10 minutes.

1 (8-ounce) block feta cheese, drained
3⁄4 cup organic Greek yogurt
1⁄2 medium organic lemon, zested
2 tablespoons Natural Grocers® Brand Organic Extra Virgin Olive Oil, plus some for serving
1 teaspoon Natural Grocers Brand Bulk Organic Red Chili Flakes (or to taste)
2 teaspoons Natural Grocers Brand Organic Capers
2 teaspoons minced fresh organic rosemary
2 tablespoons chopped fresh organic parsley
2-3 tablespoons Natural Grocers Brand Bulk Organic Pine Nuts, toasted
1-2 tablespoons Natural Grocers Brand Bulk Shelled Roasted Salted Pistachios, crushed (optional)
  1. In the bowl of a food processor fitted with a blade, combine the feta, Greek yogurt, and lemon zest. Blend, and while the processor is running, drizzle two tablespoons of olive oil through the top opening, until the feta is whipped to a smooth mixture.
  2. Transfer the whipped feta to a serving plate. With the back of your spoon, smooth the top of the feta, making an indentation in the middle (or a “well”). Pour a bit of olive oil all over the feta, then top with the chili flakes, capers, fresh herbs, and nuts.
