Chicken Tortilla Soup Recipe

Soup season is upon us! Cozy up this autumn with a simple but delicious Chicken Tortilla Soup that’s full of flavor. With just a few ingredients, some of which you likely already have at home, you can whip up a hearty and healthy soup on a busy weeknight.

1 tablespoon Natural Grocers® Brand Organic Extra Virgin Olive Oil
1 medium organic onion, chopped
3 organic garlic cloves, minced
1 pound organic chicken breasts
1 (15.5-ounce) can Natural Grocers Brand Organic Black Beans, drained and rinsed
1 (28-ounce) can Natural Grocers Brand Fire-Roasted Crushed Tomatoes
1 teaspoon Natural Grocers Brand Bulk Organic Ground Cumin
1 teaspoon Natural Grocers Brand Bulk Organic Chili Powder
1 teaspoon Natural Grocers Brand Bulk Real Salt
1 teaspoon Natural Grocers Brand Bulk Organic Ground Pepper
4 cups organic chicken broth or vegetable broth
Optional toppings

Natural Grocers Brand Organic Cheese Shreds
Natural Grocers Brand Organic Sliced Jalapeños

finely chopped organic cilantro

1. Heat oil in a large pot or Dutch oven over medium-high heat. Add onion and garlic and sauté until the veggies soften, 5-6 minutes.

2. Add the chicken breasts, beans, crushed tomatoes, cumin, chili powder, salt, pepper and chicken broth. Stir gently to combine well. Bring to a boil, reduce to a simmer, and let simmer for at least 25 minutes.

3. Remove the chicken breasts from the pot and when cool enough to handle, use two forks to shred the meat. Add shredded chicken back to the soup and simmer another 5 minutes.

4. Serve the soup with any of the optional toppings.
