Apple, Sage, and Hot Honey Gluten-Free Focaccia Recipe

Fall flavors in a gluten-free focaccia are easy when you start with Natural Grocers® Brand Gluten-Free Pizza Dough! Apples and fresh sage combine perfectly with the sweet and spicy bite of homemade hot honey for a new family favorite. It’s perfectly delicious!

1 (16-ounce) package Natural Grocers Brand Frozen Gluten-Free Pizza Dough, thawed and at room temperature
1 1/2 tablespoons Natural Grocers Brand Organic Extra Virgin Olive Oil, divided
1⁄2 small organic red apple
2 ounces soft dairy or dairy-free cheese (fermented cashew Brie or dairy Brie, cream cheese or nut cream cheese)
1⁄2 tablespoon minced organic sage
flaky salt for sprinkling
1⁄4 cup Natural Grocers Brand Raw and Unfiltered Clover Honey
1⁄2 tablespoon Natural Grocers Brand Bulk Organic Red Chili Flakes
1⁄2 teaspoon Natural Grocers Brand Organic Apple Cider Vinegar

1. Preheat the oven to 200° F. Once it reaches 200° turn it off and place a pot of hot water in the oven on the bottom rack. 

2. Knead the pizza dough in the plastic inner pouch for 30 seconds. Take it out and place it in a lightly oiled cast iron skillet. Put 1/2 tablespoon of olive oil on your hands then press the dough out into the skillet, making sure it’s even. Place it in the oven for 20 minutes to allow the dough to rise.

3. After 20 minutes, remove the dough and pot of water from the oven and preheat to 400° F.

4. While the oven is preheating core the apple and thinly slice it into half-moons, then cut each slice in half crosswise. Once the dough has risen, use your fingers to create dimples in the dough. Insert the apple slices and whichever soft cheese you are using into the dough, then top with the rest of the olive oil, allowing it to pool in any dimples and brushing it around the edges. Sprinkle with sage and flaky salt.

5. Bake on the center oven rack for 30 minutes, then remove and preheat the broiler. Place the pan under the broiler for 1-2 minutes to brown the crust, being careful not to burn the apples.

6. While the focaccia is baking, place the honey and chili flakes in a small saucepan over medium heat. Bring to a light simmer then remove from heat. Stir to combine and then allow the mixture to sit for 10-15 minutes, allowing the flavors to meld. Stir in the apple cider vinegar. If you prefer a smooth texture, you may strain the honey through a fine mesh strainer to remove the pepper flakes.

7. Remove the focaccia from the oven and drizzle the honey over it, placing any remaining honey in a container for the table. Let cool completely before cutting, then serve with honey for extra drizzling.
