We took inspiration from traditional Spanish paella for our vegan version featuring mixed mushrooms. Typically made with saffron-infused rice and a mix of meat and/or seafood, our vegan version relies on mushrooms for their meaty umami flavor and uses the more widely available arborio rice instead of traditional bomba rice. We’ve left out the saffron, but feel free to add it along with the paprika!
