Pepperoni Quiche

She’ll show you how to whip up the Pepperoni Quiche that the other healthy superheroes (Organica Girl, we’re looking at you) are always begging her to make! Grab an apron or a cape, and a fork or two—it’s time for some good4u fun!

1 (9-inch) Wholly Wholesome gluten-free pie shell
1 tablespoon organic butter, melted
6 Natural Grocers® Brand Regenerative Organic Pasture-Raised Eggs
1⁄2 of a 13.5-ounce can Natural Grocers Brand Organic Coconut Milk
2 tablespoons Natural Grocers Brand Bulk Organic Pinon Nuts
2 handfuls organic spinach, roughly chopped
12 pepperoni slices, quartered
1⁄4 cup Natural Grocers Brand Bulk Organic Seedless Raisins
  1. Preheat the oven to 350° F.
  2. Brush the base, edges, and rim of the pie shell with the melted butter.
  3. Combine the eggs and coconut milk in a mixing bowl and whisk until smooth.
  4. Evenly distribute the piñon nuts, spinach, pepperoni and raisins in the bottom of the pie shell and pour the egg mixture over the top. Use a spoon or fork to move the filling around to ensure even distribution and to make sure the egg mixture is well incorporated.
  5. Bake for 35 minutes, or just until the quiche has set and is no longer runny in the middle.
