Cheesy Spinach Puffs Recipe
Whether you’re serving guests or to the kiddos as an after-school snack, nobody can resist these golden balls of warm cheesy goodness! These Cheesy Spinach Puffs are simple to make and can be prepped ahead of time so they’re ready to pop into the oven at a moment’s notice.
40 puffs
1 (10-ounce) Natural Grocers® Brand Organic Frozen Chopped Spinach , thawed
2 cups potato flakes
1 cup water
1⁄2 cup minced organic onion
1 1⁄2 cups Natural Grocers Brand Organic Parmesan Cheese Shreds
1⁄4 cup melted butter
4 Natural Grocers Brand Regenerative Organic Pasture-Raised Eggs
½-1 teaspoon Natural Grocers Brand Bulk Real Salt
1 teaspoon Natural Grocers Brand Bulk Italian Seasoning Blend

1. Preheat oven to 400° F and line a baking sheet with parchment paper.

2. Use your hands to squeeze as much water as possible out of the spinach. Place the drained spinach in a large bowl.

3. Add all the remaining ingredients to the spinach and mix until everything is well combined.

4. Using your hands, roll one tablespoon of the mixture into a ball and place on the baking sheet. Continue rolling the mixture into balls until you’ve used up all the batter. Puffs can be tight on the baking sheet but should not touch. (For a make-ahead option, cover the baking sheet and transfer to the refrigerator for up to 24 hours. Allow to sit at room temperature for about 10 minutes before baking.)

5. Transfer the baking sheet to the preheated oven and bake for 25-30 minutes, until the tops are golden brown.

6. Allow the balls to cool slightly before enjoying them warm.
