Breakfast Sausage Bites

Breakfast can sometimes be a chore to figure out, particularly around the holidays. These little sausage bites are not only a breeze to make and a crowd pleaser, but can be made ahead of time. Don’t like sausage? No problem! Swap out the sausage for leftover chopped ham, turkey, or vegan meat substitute of your choice.

30-36 bites
1 pound breakfast sausage, defrosted if frozen
2 cups grated Natural Grocers Brand Organic Cheese, (any type)
1 cup gluten-free pancake mix
1 tablespoon Natural Grocers Brand Bulk Organic White Onion Flakes
1⁄2 teaspoon Natural Grocers Brand Bulk Organic Garlic Powder
Optional for serving: Dijon or grainy mustard
  1. Preheat oven to 375° F. Line a large baking sheet with parchment paper and set aside.
  2. Mix all ingredients together in a large bowl with a wooden spoon or your hands. Note: It will take some muscle to get the mixture to fully come together. Don’t give up!
  3. Using your hands, roll the mixture into 1-inch balls. Place on the baking sheet and bake for 15-20 minutes, or until cheese is nicely browned and sausage is cooked through.
  4. Transfer to a paper towel-lined plate to cool. Eat immediately or store in an airtight container in the fridge and reheat the next day for an easy breakfast or snack. Bites can be microwaved in 30 second increments or placed in a warm oven to reheat.
