Vegan Burger with Caramelized Onion

When you’re hungry for a plant-based burger with some oomph, this caramelized onion burger is just the thing to satisfy your cravings.

1 large organic yellow onion

2 organic garlic cloves, minced

4 hamburger buns or 4 large organic lettuce leaves
2 organic avocados, cut in half and into slices

1. Preheat the oven to 350° F.

2. Cut the onion into even slices to preferred thickness. Melt the plant-based butter in a thick-bottomed cast iron or stainless-steel pan over medium heat. Spread the sliced onion evenly in the pan, and cook for approximately 10 minutes to soften, stirring every 3-4 minutes to ensure even cooking. Add a pinch of salt and the sugar, then reduce the heat to low and continue to cook for about 30 minutes until they are deep amber in color and caramelized. Stir often enough to prevent burning but not so much to interfere with caramelization. 

3. Finish the onion with the balsamic vinegar, garlic, and thyme; stir and cook an additional 3 minutes. Set aside. 

4. For the Herb Butter Sauce: In a small bowl, combine the melted plant-based butter with the seasonings and stir until well incorporated.

5. Place the burger buns (cut in half) on a baking sheet, brush the herb butter sauce on the inside of each bun (both halves) and bake in the oven for 8-10 minutes.

6. For the burgers: Preheat a grill or pan to high heat. Once hot, brush with coconut oil (or oil of your choice) and cook the burgers 4 minutes. Flip and cook an additional 4 minutes. If you are using vegan cheese, add it as soon as the burgers are flipped and cover for the last minute of cooking to allow the cheese to melt.

7. Place burgers on the buns, top with caramelized onion, four slices of avocado, and garnish with fresh parsley. Serve immediately.
