Need a big casserole you can cook once and eat twice? Or maybe you need an easy, affordable recipe to divide up for lunches? We got you! This hearty meal is excellent with tortilla chips, a spoonful of salsa, or a dollop of sour cream and guacamole (or all of the above!).
1. Preheat oven to 350° F.
2. Heat a large skillet over medium-high heat. Once hot, add oil and swirl to coat. Add the ground turkey and all of the seasonings. Cook for 8-10 minutes, or until the turkey is cooked through, breaking it up with a wooden spoon as it cooks.
3. Add cooked turkey to the bottom of a 9x13-inch casserole dish. Spread out evenly, then layer the rice on top. Pour the juice from the tomatoes over the rice and scatter tomatoes over the top. Follow with the beans and cheese.
4. Bake for about 20 minutes, or until the cheese is melted. Serve in bowls or on plates with tortilla chips, salsa, sour cream, and/or guacamole if desired.
