Grilling Hacks: Natural Grocers™ Gluten Free Pancakes on the Grill

Keeping the heat outside during the summer months is the goal. Turning on a hot oven is the last thing any of us want, so why not extend your grilling horizons beyond chicken, burgers, and hot dogs? Did you know you can cook pizza, pancakes, and even casseroles on the grill? With no extra prep time and just one rule of thumb: if you can cook it in a cast iron skillet or Dutch oven you can cook it on the grill.

1 cup Natural Grocers® Brand Gluten Free Pancake Mix
2 Natural Grocers Brand Regenerative Organic Pasture-Raised Eggs
2 tablespoons oil or melted butter
1 cup organic milk (dairy free works too), or dairy free alternative
For serving: Natural Grocers Brand Organic Plant Based Buttery Spread , Natural Grocers Brand Organic Grade A Dark Maple Syrup
Optional toppings: fresh organic fruit , (we like berries), nut butter, and powdered sugar

1. Preheat the grill on high heat to 375° F. Adjust the grill’s heat to maintain the temperature (watch carefully to prevent the temperature from rising).

2. Place a griddle or a cast iron skillet on the grill, close the lid and preheat for 10 minutes.

3. Prepare the pancake mix according to the package instructions.

4. Grease the griddle or skillet. Use a long-handled ladle to scoop approximately ¼ cup batter (per pancake) and pour onto the griddle or skillet. Close the lid and cook for 3-4 minutes. Flip when tiny bubbles form on the top and the bottom is golden brown. Serve immediately topped with buttery spread and maple syrup or with any of the optional toppings: fresh organic fruit, nut butter, powdered sugar.
