Cheesy Zucchini Bake

This quick and easy savory zucchini bake is the perfect way to use up abundant summer zucchini squash, and can be served for any meal—breakfast, lunch, or dinner!

4 Natural Grocers® Brand Regenerative Organic Pasture-Raised Eggs
1 1⁄2 cups Natural Grocers Brand Gluten Free All-Purpose Flour
3⁄4 tablespoon Natural Grocers Brand Bulk Baking Powder
1⁄4 cup Natural Grocers Brand Organic Extra Virgin Olive Oil
3 cups shredded organic zucchini (from about 2 medium zucchini)
1 1⁄2 cups Natural Grocers Brand Mexican Blend Cheese Shreds
1⁄3 cup water
Natural Grocers Brand Bulk seasonings
1 teaspoon Organic Garlic Powder
1 teaspoon Organic Parsley Leaf Flakes
1 teaspoon Organic Dill
1 teaspoon Real Salt
1⁄2 teaspoon Organic Ground Black Pepper

4-5 organic green onions, sliced
1-2 tablespoons Natural Grocers Brand Bulk Organic White Sesame Seeds

1. Preheat the oven to 375° F and grease a 9- or 10-inch baking dish.

2. Whisk the eggs together in a large bowl. Add all remaining ingredients and stir until well combined. If using green onions, stir into the mixture and then pour into the prepared baking dish. 

3. Sprinkle with sesame seeds, if using, and place in the oven to bake for 35-45 minutes, or until golden on top and a toothpick inserted into the middle comes out clean. Let cool for a few minutes before serving.
