The Most Egg-Cellent Eggs

Eggs are a wonderfully dense source of nutrition and an extremely versatile food source. You can use eggs to make a quiche, frittata, or omelet, and you can alsohard-boil eggs,poach eggs, or scramble eggs. In fact, fried eggs can be found in all sorts of foods, such as pizza, fried rice and even on top of your favorite cheeseburger or pizza (get the point?)! Because eggs are so versatile and are a staple of a healthy breakfast, we consume a lot of eggs here in the United States.

  • And, it is estimated that 95% of the approximately 300 million laying hens come from battery-cage operations.[fn value=2][/fn]
  • Despite record high numbers of eggs being produced here in the United States, the number of flocks responsible for this production has diminished significantly over the last 20 years.[fn value=3][/fn]
  • This is an indication of the current style of egg production that dominates the industry utilizing battery cages to keep hens confined and housed in large numbers.[fn value=4][/fn]
