Spicy Chili Maple Glazed Carrots
Spice up your meal with these sweet and spicy glazed carrots! Organic carrots are an inexpensive and healthy vegetable with natural sweetness, and adding maple syrup spiced with chili seasonings gives them a kick. Topped with creamy goat cheese and crunchy pumpkin seeds, this simple side dish elevates any meal.

1 bunch organic carrots , (rainbow or orange), washed, green tops removed, and peeled if desired
1 tablespoon Natural Grocers® Brand Organic Extra Virgin Olive Oil
4 tablespoons Natural Grocers Brand Organic Grade A Dark Maple Syrup
1 tablespoon butter
~1/4 cup organic soft goat cheese
Natural Grocers Brand Bulk Seasonings
1 teaspoon Chili Powder Medium Blend
1⁄4 teaspoon Cayenne Pepper
1⁄4 teaspoon Ground Black Pepper
real brand salt, to taste
2 tablespoons Natural Grocers Brand Bulk Tamari Roasted Pumpkin Seeds

1. Preheat oven to 350° F.

2. Lay carrots on a baking sheet, drizzle with the olive oil, gently toss to coat the carrots in the oil, and roast until carrots can easily be pierced with a fork, 20-25 minutes, depending on size of carrot.

3. While carrots are roasting combine syrup, butter, and spices (through black pepper) in a saucepan and cook over low heat until it just comes to a boil, then reduce and simmer until thickened, about 10 minutes.

4. Remove carrots from oven, drizzle with the sauce, and gently toss to coat. Add salt to taste.

5. Top with dollops of goat cheese and scatter the tamari pumpkin seeds over the top. Serve immediately.
