Melon Salad

Melons in the summertime are the perfect accompaniment to hot days and picnics under the shade of a tree. This combination adds a new flavor to the crisp, sweet melons: mint, cilantro, and a hint of heat with chili powder; it’s cooling and refreshing!

1 (~3 pounds) organic cantaloupe or honeydew, cut in half and seeds removed
1 (~3.5 pounds) organic watermelon, (approximately same size as melon), cut in half and seeds removed
1 large organic lime, juiced (4-5 tablespoons)
1 tablespoon Natural Grocers® Brand Raw and Unfiltered Clover Honey, or Organic Grade A Dark Maple Syrup
1⁄4 cup chopped organic mint
2 tablespoons chopped organic cilantro
¼ - ½ teaspoon Natural Grocers Brand Bulk Organic Medium Chili Powder

1. Use a melon baller or spoon to scoop out the flesh. Place the melon into a large bowl.

2. In a small bowl or cup, stir the lime juice and honey or maple syrup together and drizzle over the melon, gently stirring to ensure even coverage.  

3. Sprinkle the mint, cilantro, and chili powder over the melon and gently toss to combine. 

4. Place the melon salad into a serving bowl or the empty watermelon halves, garnish with sprigs of mint and cilantro, and serve immediately. Refrigerate leftovers.
