1. Preheat oven or grill to 425°F.

2. Cover each crust with 3 tablespoons of pesto, leaving a 1-inch border.

3. Sprinkle the mozzarella and feta cheese over both pizza crusts evenly.

4. Top the pizzas with the sliced tomatoes, olives, onion, red peppers, capers, and optional toppings of your choice.

5. Sprinkle the oregano over both pizzas and drizzle ½ tablespoon of olive oil over each pizza, avoiding the edges.

6. Bake for 8-10 minutes, until crusts are golden brown (follow package directions if using an alternate crust). If grilling, keep the grill cover closed and check the pizza once or twice during cooking to prevent burning.

7. Remove from oven/grill and top with arugula or baby spinach leaves. Serve immediately.
