Fruity Watermelon Pizza

Who doesn’t love the cool, refreshing taste of watermelon during the hot summer months? We’ve taken it up a notch with this Fruity Watermelon Pizza. Thick slices of watermelon are topped with a yogurt-cream cheese sauce and the freshest summer fruit. It’s healthy, delightful, and refreshing and makes a wonderful snack or light dessert. Make it vegan by swapping the yogurt and cream cheese for dairy-free options.

4 tablespoons organic Greek yogurt
1⁄2 cup organic cream cheese
1 teaspoon organic lemon juice
1 tablespoon Natural Grocers Brand® Organic Grade A Dark Maple Syrup
1 small organic seedless watermelon, ~7 pounds
1 cup organic berries (blueberries, raspberries, and/or strawberries, stems removed and thinly sliced)
1⁄2 cup sliced organic fruit of choice (cantaloupe, kiwi, mango, peaches, plums, etc.)
1⁄4 cup Natural Grocers Brand Bulk Organic Pecan Pieces, (or nuts or seeds of choice), optional

1. In a small bowl, mix the yogurt, cream cheese, lemon juice, and maple syrup together until well combined.

2. To slice the watermelon into rounds, lay the watermelon on its side and use a long, sharp, sturdy knife to cut evenly spaced (1 to 1 1/2-inches) slices from the watermelon. For the pizza, you’ll need 3 rounds. Set aside the remaining watermelon to cut into cubes and store in the refrigerator to eat later.

3. Divide the cream cheese mixture evenly among the watermelon rounds and spread over the top. Sprinkle the fruit over each one and top with pecan pieces. Slice each round into quarters and serve.
